Basic Baked Chicken
  • 1 whole Broiler Chicken or Chicken Pieces
  • Salt (preferably Unrefined Sea Salt)
  • Pepper
  • Granulated Garlic or Fresh Minced Garlic (optional)
  • Olive Oil
  1. Preheat oven to 350 degrees farenheit.
  2. Pat defrosted chicken dry with paper towel. Rub olive oil generously over the chicken and inside the cavity for a whole chicken.
  3. Rub salt, pepper and granulated/minced garlic generously all over the piece.
  4. Place chicken on rack in an open roasting pan or rectangle casserole pan, that has been greased itself with olive oil. 
  5. Place in preheated oven for 45 minutes to 1 1/2 hours for chicken peices (depending on the cut - breast take less time, leg quarters take more), or 1 1/2 - 2 hours for a whole chicken. Check to make sure internal temperature is at least 180 degrees farenheit.
