Basic Baked Chicken
- 1 whole Broiler Chicken or Chicken Pieces
- Salt (preferably Unrefined Sea Salt)
- Pepper
- Granulated Garlic or Fresh Minced Garlic (optional)
- Olive Oil
- Preheat oven to 350 degrees farenheit.
- Pat defrosted chicken dry with paper towel. Rub olive oil generously over the chicken and inside the cavity for a whole chicken.
- Rub salt, pepper and granulated/minced garlic generously all over the piece.
- Place chicken on rack in an open roasting pan or rectangle casserole pan, that has been greased itself with olive oil.
- Place in preheated oven for 45 minutes to 1 1/2 hours for
chicken peices (depending on the cut - breast take less time, leg
quarters take more), or 1 1/2 - 2 hours for a whole chicken. Check to
make sure internal temperature is at least 180 degrees farenheit.
